Eggs with avocado toast are the perfect breakfast. It consists mainly of two super foods (eggs and avocado) that are rich in healthy fats, fiber, and protein with a nice slice of toasted bread for energy. As a favorite sandwich, it can serve as lunch or dinner and could take less than 15 minutes to prepare.

In discussing eggs with avocado toast, we’ll go over the steps in making the sandwich, the ingredients, and nutrition facts.

The meal is prepared with ripe avocados so we’ll start by discussing how to tell if the avocado we intend to use is ripe and ready.

How to tell if the avocado is ripe.

The avocado has to be ripe yet slightly firm rather than over-ripe and too soft. There are times when people make all the preparations only to realize the avocado isn’t ready to be part of the ingredient. This is the first thing you should find out.

While trying to tell a ripe avocado from an unripe one people often look out for the color change. I once bought a pair of unripe avocados but forgot them for a while. When they eventually crossed my mind I was on the lookout for the colors of a ripened avocado fruit.

However, by the time I was satisfied with the color transformation, it turned out they were already over-riped. So it’s a good practice to feel your avocado fruits to know when they are ripe rather than watching the color alone.

To tell if the avocado is sufficiently ripe but not over-ripe, there are a couple of ways:

  1. The stalk: pull gently at the stalk. The stalk of an avocado that isn’t ripe won’t easily come off. If it comes off easily you then check for the color of the inside of the fruit. A green-colored one is ripe enough to serve your purpose but one that has turned brown is over-ripe and may not be suitable.
  2. Color: a ripe avocado will have a black or dark green color.
  3. Skin texture: You’ll expect the skin of a ripe one to have a rougher and uneven texture.
  4. Squeezing: hold the fruit in one hand and squeeze gently. A hard and unyielding fruit isn’t ripe. One that yields easily to pressure is probably over-ripe. What you need is a fruit that yields but is firm.

It’s a good practice to feel your avocado fruits to know when they are ripe rather than watching the color change alone.

How to make eggs with avocado toast.

Firstly, we’ll talk about the specific ingredients needed for it. The ingredients for a serving of eggs with avocado toast are listed below.

  • Eggs (one boiled, fried, scrambled, or poached),
  • Ripe Avocado ( a quarter of one fruit),
  • Pepper(a quarter of one teaspoon),
  • Salt to taste(to be sprinkled),
  • A slice of bread with appropriate thickness. These are the main ingredients.

Other ingredients depend on individual preferences and how you want to prepare your eggs. They include olive oil, garlic powder, scallions, lemon juice, vinegar (for poached eggs), etc.

The example I’ll give here will be one prepared with hard-boiled eggs. You get your eggs boiled as you normally would and if you do not know how, follow the easy steps below.

  • Put your egg into a saucepan and cover it with water up to 1 or 2cm deep.
  • Bring it to boiling point and keep it boiling for about 30 seconds.
  • Cover the pan and take it off the fire.
  • Allow it to stand for up to 12 minutes. For soft-boiled eggs, you may leave them for about 5 minutes. 7 minutes lies between a soft and hard-boiled egg and some prefer it.
  • Bring out the egg using a vintage wire, hollow spoon, or whatever you normally use on a good day.
  • Place the egg in ice-cold water. If you used fresh eggs, crack the shell first before placing it in the icy water. This is because boiled fresh eggs can be difficult to peel but with cracked shells, water sips under the shell and makes it easier.

After ensuring your avocado is ripe and ready, take the following steps to prepare your eggs with avocado toast.

  • Get your sliced bread of choice toasted so it’s slightly brown and crispy.
  • Peel your boiled eggs, and cut them cross-sectionally or however, you prefer.
  • Cut out a quarter of the ripe avocado and peel off the skin.
  • Place the avocado on the toast, slice it into bits, and then mash the pieces on the toast with a fork. Alternatively, you may want to mash it in a saucer together with salt, pepper, and other spices you love. You could even add some olive oil while mashing.
  • If you mashed the avocado directly on the toast, go ahead and lay your eggs on the avocado. If it was mashed in a saucer, proceed to spread it evenly on the toast using a suitable utensil after which you lay the eggs on the avocado.
  • Sprinkle your spices on the combo and possibly some edible oil as well. You won’t need to follow this last step if your avocado was separately mashed with the spices in a saucer.

At the end of the above-listed steps, your egg with avocado toast is ready to be served. Below is a video, that covers most of the above steps, which I believe will be a useful guide.

Scrambled eggs with avocado toast.

This is very much similar to the egg with avocado toast described above. The only difference is in the egg preparation and here we are dealing with scrambled eggs.

Scrambled eggs can be made to be hard or soft, just like boiled eggs, but we are not going to focus on the variation. We will rather highlight how to make simple and fluffy scrambled eggs for your avocado toast.

  • Firstly you’ll have to crack your eggs and empty the contents into a bowl.
  • Whisk it sufficiently. At the time of whisking spices are often added to the mixture but not everyone likes it that way.
  • Get some butter into a non-stick pan or whatever you have and heat gently till it melts.
  • Then empty your whisked egg into the middle of your pan and watch it till it starts to set.
  • Use a wooden spatula or any suitable utensil to turn the egg from the edges towards the middle of the pan. You keep repeating this process till there is no more fluid egg substance in the pan. By the time you let it off the heat, it should’ve cooked for up to 5 minutes or slightly more, and there you have your scrambled egg.

With your scrambled eggs ready, you then proceed with the preparation of the eggs with avocado toast just as outlined above. When it gets to the point of adding the eggs, you simply spread your scrambled eggs on the avocado instead of a cooked one.

Poached eggs with avocado toast.

Just like in the last section, the difference between this and the already listed steps in making eggs with avocado toast is in the eggs. Here, poached eggs are used.

To make a poached egg you’ll need a slightly deep pan filled with water to about ¾ of its depth. White vinegar is good for improving the shape of your eggs. Follow these steps:

  • Crack the egg and empty the content into a small but deep bowl
  • Heat the water to boiling and then lower the flame so it starts shimmering.
  • Add some vinegar to the water.
  • Turn the water-vinegar mixture to create a vortex before gently pouring the egg into the middle of the vortex.
  • After about 3 minutes your poached egg should be ready to serve as part of your ingredient for a poached egg with an avocado snack.

Avocado toast with two eggs calories.

There is a great variation in the calories you get from eggs with avocado toast but it usually falls below 300 calories with a range between 200 to 300 calories. Most of the calories you get come from the bread because eggs and avocado are traditionally low-calorie foods ideal for ketogenic diets.

Whether you used an egg or two eggs isn’t expected to make so much difference In calories as much as the thickness of the slice of the bread as well as the type of bread used. Some bread types have higher calories than others.

If you choose to mash the avocado directly on the bread you may have to use a thicker slice that can withstand the pressure without breaking. The extra thickness of course means more calories.

Your choice of additional ingredients for garnishing your sandwich may also add to the calories per serving.
