Avocado salad with chicken is a highly nutritious yet healthy way of enjoying your chicken with no added cream or mayonnaise. Depending on other ingredients you may want to add, this may pass for an excellent keto diet with its low-carb content plus high protein.

There are so many ways of making it and you could easily swap ingredients so much so that we’ll only discuss one of the ways of making the salad.

As the title of this article suggests, the main ingredients for this particular variety of salad are:

1. Two ripe avocados: It has to be ripe but not overripe. It should just be as ripe as the type used in making eggs with avocado toast. You easily get the right avocado for this dish by gently squeezing the avocados with your hand. A good one will yield slightly but remain firm to touch.

2. Two cooked chicken breasts: This could be prepared in so many different ways. Whereas the avocado salad with chicken doesn’t take much of your time, not having an already-cooked chicken will significantly add to the time you’ll spend putting the dish together.

A deboned rotisserie chicken makes the cooking quick and easy but you could still take the time to prepare your fresh chicken by any of so many different ways of cooking it like grilling, roasting, frying, etc.

If grilling chicken breasts, you’ll need to place them flat on your chopping board and slice through the length of each of them horizontally before applying your seasoning. This is to reduce their thickness so they could cook faster in addition to a better penetration of the spices. Grill each side of the chicken for 3-8 minutes.

Grilling time should depend on how thick it is, or how long you are used to it.

Other ingredients could differ widely according to individual preferences. You could add or remove just about anything in the ingredients and still end up with a super yummy avocado salad with chicken.

However, for you not to get confused, I’ll list mostly the ingredients that are featured in the demonstration video I’ll post here. I’m good in the kitchen but as a practicing healthcare provider that covers quite a few hospitals, I neither have the time to make videos nor someone to do that for me at this time.

Until I’m able to make videos, I’ll share any useful video from YouTube that I feel will give practical touches to my content. Apart from the avocado and chicken, below are other ingredients you’ll need.

  • Half teaspoon of black pepper,
  • Large lettuce,
  • Half a teaspoon of salt,
  • ¾ teaspoon of smoked paprika,
  • Four minis or 2 large cucumbers,
  • ¾ cup of cherry tomatoes
  • ¾ teaspoon of cumin.

Other ingredients in common use are onions, parsley, cilantro, dill, etc. Except for the avocado and chicken, you could swap just about any ingredient for another and still have your delicious salad.

One of the most outstanding attributes of this dish is doing away with mayo or mayo-based salad dressing. You’ll easily be able to make a healthier dressing in no time using the following ingredients:

  • The juice from a good-sized lemon,
  • A quarter cup of virgin olive oil,
  • A quarter teaspoon of salt,
  • A quarter teaspoon of black pepper,
  • Half teaspoon of Italian seasoning,
  • A quarter teaspoon of Sugar. This is what was used in the video but you may consider using honey which I think is a healthier alternative.

How to Make the avocado salad with chicken, step by step.

With your chicken made ready for the salad, proceed with the following steps:

1. Chop your lettuce and transfer it into a sizable bowl for the salad but dispose of the core.

2. Cut each of your avocados in half by cutting around the stone lengthwise. Then, pit it after which you further cut each half lengthwise to create four separate quarters of the full fruit. Afterward, you may choose to cut each quarter widthways or dice it by cutting both widthways and lengthways before adding it to the bowl.

3. Chop each cucumber cross-sectionally into coin shapes and get them into your salad bowl.

4. Slice each of your cherry tomatoes into two halves and transfer the pieces into your bowl as well.

At this point, you can proceed to make the dressing in the following steps:

5. Cut your lemon cross-sectionally into two halves and squeeze the juice into your quarter cup of virgin olive oil. Use a strainer to keep the seeds from getting into the oil. You may use your hands if a strainer isn’t handy.

6. Add your salt, pepper, and Italian seasoning to mix with the olive oil.

7. You may add sugar as shown in the video or better still, a teaspoon or two of natural honey.

8. Mix the contents of your salad bowl first. Then mix the olive oil with the condiments to form the dressing.

9. Drizzle some of the dressing into your salad and mix again.

10. Finally, chop your cooked chicken into pieces and add it to your salad. You may mix again or not but at this point, your salad is fully ready as shown in the video above.

Next, we’ll go over a couple of variations of avocado salad with chicken. In each of them, the most important ingredients are the basic avocado and chicken plus an extra ingredient that makes it stand out from the others.

Rustic corn and avocado salad with chicken.

As the heading suggests, this has corn as an additional ingredient besides the basic avocado and chicken. The preparation is straightforward. Corn is not missing in most avocado and chicken salads.

You’ll need an ear of fresh corn which you’ll prepare by cooking, grilling, roasting, or whichever way you enjoy it. Once the corn is cooked and ready plus your chicken as well, then proceed with the steps in making your favorite avocado salad with chicken. This time you’ll have to add corn as part of the ingredient.

You’ll need to use a sharp knife to cut the corn from the cob before adding it to your salad as shown in the video below.

There are lots of variations between the steps and ingredients used in this video and the previous one. Whichever steps you choose to take will give you the same results about a delicious dish but each may have its unique taste.

Mango avocado salad with chicken.

The additional main ingredient here is the mango. You only need to prepare your normal avocado and salad with chicken at the end of which you’ll add your extra ingredient…..the mango.

Firstly, it has to be a ripe mango. You easily cut the mango using a mango slicer or knife if you don’t have one. With the fibrous nature of Mangoes, you’ll need to be careful not to cut yourself if using a knife.

Separate the mango from the skin with a fruit scoop or any suitable utensil at your disposal. Then dice the mango before adding it to your salad. At this point, you may prepare your dressing or add it if you’ve already made it.

There you have it, your mango avocado salad with chicken!

There is also a strawberry, spinach, or sun-dried tomato, plus an avocado salad with chicken. Each of them has an additional ingredient by which it’s distinguished just in line with its title. In the case of strawberry avocado salad, for instance, we have strawberries rather than mango or corn.
